Tom Yum Soup Recipe
Ingredients

12 to 14 medium shrimp

6 cups chicken stock

A small piece of Ginger
-
3 leaves bay leaves
-
1 stalk lemongrass (finely minced)

4 cloves garlic (finely minced)

3 tbs onion (finely minced)

A couple of mushrooms
-
1 carrot sliced
-
1 small zucchini
-
1 tsp lime juice
-
1 1/2 tbs fish sauce
-
1/2 tbs soy sauce
-
1 cup cherry tomatoes (sliced in half)

Coconut milk to taste

1 teaspoon chilli oil
-
1/3 cup fresh coriander
-
Crushed chilli pepper flakes (to taste)
How to do?

Gather the ingredients.

Pour the stock into a deep cooking pot and switch heat to medium-high.

Add the lemongrass, with the upper sections of the stalk.

Boil everything for 5 to 6 minutes till it softens.

Add ginger, garlic, onion, fish sauce, soy sauce, bay

leaves, lime juice and carrots.

Cover it and continue to boil for about 5 minutes.

Now add mushrooms and zucchini and continue boiling for another 5 minutes.

Add shrimp and cherry tomatoes.

Cook another 3 minutes, or until the shrimp turn pink and fluffy.

Turn down the heat to low flame

Add the coconut milk and fish sauce to taste.

Please taste it and if you want to add anything more, this is the time to do it.

Once done, sprinkle coriander and the yummy Tom Yum Soup
